Summer is the time to get outside and heat up the grill. And this recipe for sweet and savory shrimp pineapple skewers is the perfect three-ingredient dinner for a laid-back night. It’s low lift but full of flavor. Serve your skewers over rice, noodles or wrapped in a fluffy flatbread.

Ingredients

  • 1 lb. large shrimp peeled and deveined
  • 2 cups fresh pineapple chunks
  • 1/2 cup barbecue sauce
  • Fresh lime and cilantro for serving (optional)

Instructions

  1. Preheat grill to medium heat.
  2. Thread shrimp and pineapple onto soaked wooden or metal skewers. Brush on both sides with barbecue sauce.
  3. Place skewers on grill over indirect heat and cook for 2 to 3 minutes per side, until shrimp are pink and just cooked through. Brush with additional barbecue sauce before flipping.
  4. Serve immediately with lime juice and cilantro for garnish.
