Simple Creamy Potato Soup

There’s a lot to love about soup. A throw-everything-in-one-pot meal, soup can help clear your fridge of uneaten produce and involves only light preparations. Plus, it’s highly customizable and nearly impossible to ruin. This simple potato soup acts as a comforting side dish, but toss in leftover veggies and your favorite grains, and you get a creamy, easy-breezy, all-in-one meal.

Serves 2


1- 2 Tbsp. Bob’s Red Mill Potato Flour
1-2 Tbsp. chopped onion
1 cup milk
1 Tbsp. unsalted butter or margarine
Salt & pepper, to taste


  1. In a saucepan over medium heat, melt butter. Sauté chopped onions until tender.
  2. Add milk and potato flour, stirring constantly, until you reach desired thickness.
  3. Season to taste with salt and pepper. If desired, add additional seasonings or toppings, such as cheese, bacon bits (or coconut bacon) or scallions.

Note: Add your favorite vegetables to make a creamy vegetable soup!
