Single-Serve Lentil Soup
Serves 1
Ingredients
 
1 tsp. extra-virgin olive oil
 1/2 small Vidalia onion, finely chopped
 1 large carrot, finely chopped
 2 large celery stalks, finely chopped
 2 garlic cloves, minced
 1/4 tsp. sea salt
 1/4 tsp. pepper
 1/2 box low-sodium vegetable broth
 1 cup cooked lentils
 1 tsp. balsamic vinegar
 
Directions
1. In a medium-sized saucepan, heat olive oil over medium heat. Add onion, carrot and celery; cook for 5 minutes, then add remaining ingredients. Cook for another 10 minutes. Transfer to a serving bowl.
2. Serve warm.
