Single-Serving Peach Cobbler Cake

Ingredients

1/3 cup oat flour
1/3 cup almond flour
2 Tbsp. coconut sugar
1 tsp. cinnamon
1 tsp. baking powder
1 Tbsp. ghee
¼ cup almond milk
1 egg white
1/2-1 peach, sliced

Directions

  1. Preheat oven to 350 degrees F and coat a ramekin with non-stick cooking spray or coconut oil.
  2. In a large bowl, mix together all ingredients – except peach slices – until well combined and smooth.
  3. Pour batter into prepared ramekin and top with peach slices and more cinnamon.
  4. Bake approximately 30 minutes, or until edges begin to crisp.
