Slow-Cooker Spanish Chicken & Rice
1 pkg. gluten-free Spanish rice mix
1 cup chopped onion
1 cup chopped bell pepper
1 lb. boneless chicken breast or thighs
4 cups water
- In crock pot, combine rice mix, onion, bell pepper and water and stir to combine
- Place chicken on top.
- Cover crock pot with lid and set to low. Cook mixture for 6-8 hours.
- Shred chicken before serving.
