Smoked Sweet Potato and Coconut Soup
Ingredients
- 2 large sweet potatoes
- 1/2 yellow onion, halved
- 3 garlic cloves
- 1/2 can coconut milk
- 1 1/2 cups vegetable stock
- 1 tsp. ground ginger
- 2 tsp. turmeric powder
- Salt and pepper
- Green onion
- Olive oil
Instructions

Set smoker OR oven to 375 degrees. Wash potatoes, pierce a few holes, rub with a little oil and season with salt and pepper.

On a baking sheet, place potatoes, garlic cloves, and onion. Place on/in the smoker (or oven) and close the lid.

After about 45 minutes, check the tenderness; you want a fork to pierce through with ease. Continue to cook if necessary. Remove and cool.

Remove skin from potatoes. In a blender, add potatoes, vegetable stock, coconut milk, ginger, salt and pepper. Blend until creamy.

In a sauce pot over medium heat, pour in soup. Add turmeric. Mix well and warm up for 5 minutes before serving.
Recipe Notes
Tip:
Adding turmeric at the end when the soup is heating in the pot is done to prevent this vibrantly colorful spice from staining your blender.
