Smoked Sweet Potato and Coconut Soup

There’s no denying the comfort provided by a warm bowl of soup —  and when it’s this creamy soup made with simple ingredients like sweet potatoes, onions, coconut milk and spices, it’s like your favorite blanket, a purring kitten and a friendly hug all wrapped into one! Sappy metaphors aside, you’ll find plenty of flavor, warmth and nourishment in every spoonful of this vibrantly colored dish. 

If you have access to a smoker, use it to add a new level of smoky depth to your sweet potatoes; if not, the oven cooking method is soup-erb!

Smoked Sweet Potato and Coconut Soup

  1. Set smoker OR oven to 375 degrees. Wash potatoes, pierce a few holes, rub with a little oil and season with salt and pepper.
  2. On a baking sheet, place potatoes, garlic cloves, and onion. Place on/in the smoker (or oven) and close the lid.

  3. After about 45 minutes, check the tenderness; you want a fork to pierce through with ease. Continue to cook if necessary. Remove and cool.
  4. Remove skin from potatoes. In a blender, add potatoes, vegetable stock, coconut milk, ginger, salt and pepper. Blend until creamy.

  5. In a sauce pot over medium heat, pour in soup. Add turmeric. Mix well and warm up for 5 minutes before serving.

Recipe Notes


Adding turmeric at the end when the soup is heating in the pot is done to prevent this vibrantly colorful spice from staining your blender.
