Snickerdoodle Cookie Ice Cream Sandwiches
On large plate or baking sheet, arrange cookies face down.
Scoop ice cream onto back of cookie and place another cookie on top.
In bowl, mix together coconut sugar and cinnamon.
Roll side of each ice cream sandwich into cinnamon-sugar mixture to cover ice cream.
Serve immediately or freeze in freezer-safe container. (Remove from freezer and let thaw for 5-10 minutes before serving.)
