The best things in life are sometimes the simplest. Take a basic sugar cookie recipe, for instance. The ingredients aren’t hard to come by, and the work that goes into baking a batch is completely kid-friendly. It’s a win-win all around, which is precisely why you should bring the modest delight of a sugar cookie to the breakfast table. Transformed into a muffin and coated with cinnamon-sugar, these will be make everyone snicker, doodle and smile.
Muffins
¾ cup whole wheat flour
½ cup almond flour
½ cup coconut sugar
2 oz. unsweetened applesauce
¼ cup almond milk
1 tsp. baking powder
2 tsp. cinnamon
1 egg white
Topping
3 Tbsp. coconut sugar
2 tsp. cinnamon
Directions
- Preheat oven to 350 degrees F and coat a muffin pan with non-stick cooking spray.
- In a large bowl, combine all muffin ingredients and stir well.
- In a separate bowl, stir together topping ingredients, adding more of either to make a nice, even blend.
- Pour muffin batter into prepared pan, filling each cup almost all the way to the top.
- Sprinkle topping mixture over each muffin and bake 20-25 minutes, or until a toothpick comes out clean.
- Let cool and eat ‘em up!
