If you have a soy allergy or sensitivity, “tofu” is a four-letter word. Or… is it? There’s a new tofu in town, and it’s made from a soy-free superfood you already know (and likely love). In this vegan egg-salad-esque recipe, nutty hemp tofu offers a perfect substitute for the soy version, especially when paired with zesty curry, tangy vegan mayo and fresh veggies. The end result is a tasty topping for greens or spread for your fave wrap.
Curried Hemp Tofu Salad
Ingredients
1 Tbsp. apple cider vinegar
1 pkg. soy-free hemp tofu
1/4 cup soy-free vegan mayo
2 Tbsp. curry powder
1/4 cup celery, diced
2 Tbsp. green onions or scallions, chopped
1/4 cup fresh parsley, chopped
1/4 cup slivered almonds
- In a medium-sized bowl, combine tofu, vinegar, mayo and curry powder until mixed.
- Add almonds, celery, onion and parsley.
- Enjoy over a bed of greens – can also be used as as a spread for your favorite wrap.
