Spinach & Pine Nut Stuffed Chicken Breasts
Ingredients
4 6-oz. chicken breasts (boneless/skinless)
4 egg whites
½ cup spinach (frozen or fresh), finely chopped
1 green onion, chopped
1 oz. pine nuts
1 bag stuffing mix
1 can low-fat cream of chicken soup
1 can water
Directions
- Preheat oven to 350 degrees F.
- Prepare stuffing according to package directions. Mix in egg white, spinach and pine nuts.
- Spoon 1 tablespoon of stuffing mixture onto chicken breast. Roll chicken breast and place in baking dish.
- Mix soup with one can of water. Pour soup over tolled chicken breasts. Sprinkle with green onions.
- Bake stuffed chicken breasts for 25 to 30 minutes.
