Spinach & Pine Nut Stuffed Chicken Breasts

Bursting with spinach and protein-packed pine nuts, these baked chicken breasts are stuffed with nutrition and gourmet flavor, with the added bonus of being diet friendly. A single serving has just 400 calories and 9 grams of fat, and there’s no need for a side dish, because your serving of veggies is built in!

Spinach Stuffed Chicken Breasts

Spinach & Pine Nut Stuffed Chicken Breasts

Ingredients

4 6-oz. chicken breasts (boneless/skinless)
4 egg whites
½ cup spinach (frozen or fresh), finely chopped
1 green onion, chopped
1 oz. pine nuts
1 bag stuffing mix
1 can low-fat cream of chicken soup
1 can water

Directions

  1. Preheat oven to 350 degrees F.
  2. Prepare stuffing according to package directions. Mix in egg white, spinach and pine nuts.
  3. Spoon 1 tablespoon of stuffing mixture onto chicken breast. Roll chicken breast and place in baking dish.
  4. Mix soup with one can of water. Pour soup over tolled chicken breasts. Sprinkle with green onions.
  5. Bake stuffed chicken breasts for 25 to 30 minutes.
