Spring Detox Salad With Kale, Avocado & Pears

Bowls are big right now. Whether they’re crammed full of raw zucchini noodles and chopped veggies or overflowing with yogurt, fruit and smoothie fixins’, it’s easy to eat clean when a bunch of good-for-you foods are combined into a complete (and colorful!) meal. As soups, stews and chilis make their way off the menu this season, start tossing together lighter, more refreshing dishes–like this naturally detoxifying spring salad. It captures the perfect mix of textures and tastes – crisp kale, creamy avocado, sweet pear and crunchy pumpkin seeds – for a dish that fills you up without weighing you down. No spoon required!

 

Spring Detox Salad With Kale, Avocado & Pear

Ingredients

1 bunch of well rinsed kale
2 pears, chopped
2 avocados, cubed
¼ cup pumpkin seeds

Dressing

Pinch sea salt to taste
2 Tbsp. olive oil
1 lemon, juiced

Directions

  1. Chop kale, pear and avocado into bite-sized pieces.
  2. Toss with pumpkin seeds.
  3. To make dressing, mix together salt, olive oil and lemon juice.
  4. Drizzle dressing over salad and serve.
