Strawberry Lemonade Quest Bar Pie

You’ll combine the punchy flavors of strawberry and lemons with the warmth of a gooey fruit pie. This recipe makes enough for one, leaving you to savor every last crumb.

Protein-Rich Strawberry Pie

Strawberry Lemonade Quest Bar Pie

Ingredients

1 ½ Lemon Cream Pie Quest Bar
½ cup strawberries, chopped
3 Tbsp. granulated stevia
1 Tbsp. sugar-free strawberry jam
1 Tbsp. lemon juice

Directions

  1. Preheat oven to 350°F. Coat a mini-pie dish with nonstick cooking spray.
  2. Microwave 1 Quest Bar for 12 seconds. Mold the melted bar into the mini-pie dish to form a crust.
  3. In a small saucepan over medium heat, mix strawberries, jam, stevia and lemon juice. Cook for about 10 minutes, or until the mixture slightly thickens. Stir occasionally. I added a little cornstarch to the mix with water to help it thicken up and reach the desired consistency.
  4. Spoon strawberry mixture into pie shell.
  5. Cut the half Quest bar into 4 even strips, about ½ inch wide and 3 inches long. Microwave the strips for about 8 seconds. Place strips over pie filling to form a lattice pattern on top.
  6. Bake for about 8 minutes, or until golden.
  7. Cool slightly and enjoy!
