Strawberry-Nut Protein Loaf
Makes 16 servings or slices

Ingredients
1/3 cup raw cashew butter
1 cup strawberries, diced
½ cup plain Greek yogurt
4 egg whites
1 tsp. vanilla extract
1 cup oat flour
¾ cup almond meal flour
1 ½ scoops vanilla whey protein powder
1 tsp. sugar-free strawberry gelatin mix
½ cup xylitol
1 tsp. baking powder
Directions
- Preheat oven to 350 degrees F and coat a loaf pan with non-stick cooking spray.
- In a large bowl, combine cashew butter, ½ cup diced strawberries, yogurt, egg whites and vanilla extract. Stir together until mixture is smooth.
- In a separate bowl, stir together flours, protein powder, gelatin mix, xylitol and baking powder until combined.
- Add wet ingredients to the dry mix and stir until well combined. Stir in remaining diced strawberries.
- Pour batter into loaf pan, smoothing down with a spoon. Bake 42-44 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool 30 minutes, slice into 16 even pieces and serve (your guests or yourself)!
