Strawberry-Nut Protein Loaf

On the menu are warm, cheesy quiches, paired with home-baked breads you won’t find anywhere else (banana-pecan bread, anyone?). If you’ve never had the pleasure, try your hostess hand at this unique fruit-and-nut loaf that’s sure to give you a taste of sweet southern hospitality.

Strawberry-Nut Protein Loaf

Makes 16 servings or slices
Macros for 1 serving: 134 calories | 7.5 g protein | 15.2 g carbs | 6.3 g fat | 2 g fiber | 1.7g sugar

Ingredients

1/3 cup raw cashew butter
1 cup strawberries, diced
½ cup plain Greek yogurt
4 egg whites
1 tsp. vanilla extract
1 cup oat flour
¾ cup almond meal flour
1 ½ scoops vanilla whey protein powder
1 tsp. sugar-free strawberry gelatin mix
½ cup xylitol
1 tsp. baking powder

Directions

  1. Preheat oven to 350 degrees F and coat a loaf pan with non-stick cooking spray.
  2. In a large bowl, combine cashew butter, ½ cup diced strawberries, yogurt, egg whites and vanilla extract. Stir together until mixture is smooth.
  3. In a separate bowl, stir together flours, protein powder, gelatin mix, xylitol and baking powder until combined.
  4. Add wet ingredients to the dry mix and stir until well combined. Stir in remaining diced strawberries.
  5. Pour batter into loaf pan, smoothing down with a spoon. Bake 42-44 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool 30 minutes, slice into 16 even pieces and serve (your guests or yourself)!
