Some people like them; others despise them. Surprises aren’t for everyone. But certain behind-the-scenes scenarios can play out well in your favor. (You don’t have to know everything, you know?) For instance, you’re going about your morning, enjoying a freshly baked muffin when a sweet strawberry jelly comes gushing out. It’s not at all what you expected, but you can’t turn back now. Besides, worst case, you need a few more napkins – mostly to wipe that smile off your face.
Strawberry Surprise Muffins
Ingredients
1 ½ cups oat flour
¼ cup coconut flour
2 Tbsp. coconut oil
¼ cup honey
1 tsp. vanilla
1 tsp. baking powder
2 eggs
Filling: strawberry jam
Directions
- Preheat oven to 350 degrees F and prepare a muffin pan with paper liners.
- In a large mixing bowl, combine all ingredients, except the filling, and stir until well combined and smooth.
- Pour a small amount of batter into each muffin cup, filling only about ¼ of the way. Spoon 1 tablespoon strawberry jam on top of each muffin. Top with more batter until about 2/3 full.
- Bake 20-25 minutes, or until edges begin to turn golden.
