One banana, two banana, three nuts and more! Preparing warm, moist banana bread is so easy a monkey could do it. Making it taste way above average, however, is a little more involved – as in more fruit and nuts. In this recipe, you’ll add various nut-based ingredients to the basic mix, and then top it all off with sweet, fresh strawberries. Your taste buds will go ape for this pumped-up banana bread.
Ingredients
1 ½ cups almond flour
1 cup oat flour
½ cup coconut sugar
2 ripe bananas
1/3 cup walnuts, chopped (reserve some for topping)
½ cup strawberries, chopped (reserve some for topping)
¼ cup honey
¼ cup cashew milk
2 Tbsp. coconut oil, melted
1 tsp. baking powder
1 egg
Pinch of salt
Directions
- Preheat 350 degrees F and coat a loaf pan with non-stick cooking spray.
- In a food processor, blend all ingredients together (except walnuts and strawberries) until well-combined.
- Stir in strawberries and walnuts to incorporate.
- Pour batter into prepared loaf pan and bake 1 hour, or until a toothpick comes out clean.
Baking tip: When using fresh fruit in a recipe, place fruit on a paper towel before adding to your dish. This will allow excess moisture to drain out.
