Ingredients

2 cups great northern beans
1 cucumber, diced
1 chopped red bell pepper
1/2 cup shredded carrots
1/4 cup chopped dill
1/3 cup olive oil
2 Tbsp. lemon juice
1 Tbsp. coconut sugar
1 Tbsp. Italian seasoning

Directions

1. In a large bowl, add beans, cucumber, red bell pepper, carrots and dill. Stir until well combined.

2. In a small bowl, whisk together olive oil, lemon juice, coconut sugar and Italian seasoning.

3. Pour oil dressing over bean mixture. Gently stir to combine.

4. Serve chilled.
