Sunshine Lemon Squares

If sunshine had a flavor, the taste of these bars would be it. This sweet-tart treat is great for those uninterested in chocolaty desserts (yes, these people actually exist). Dusted with powdered sugar, they make for an aesthetically pleasing platter when garnished with thinly sliced lemon rounds. Go ahead, take a bite of sunshine!

Ingredients

Crust

2 cups Simple Truth All-Purpose Flour
1 cup Simple Truth Organic Powdered Sugar
1/8 tsp. salt
1 cup unsalted butter, at room temperature 

Filling

4 eggs
2 cups Simple Truth Organic Granulated Sugar
6 tbsp. flour
6 tbsp. lemon juice

Directions

  1. Preheat oven to 350 degrees F. Lightly grease 9 x 13-in. pan.
  2. In large bowl, combine flour, powdered sugar and salt to make crust. Cut in butter to achieve crumbly consistency.
  3. Press mixture into prepared pan. (Tip: Dip fingers into a little flour or powdered sugar to keep dough from sticking to your hands.) Bake for 20 minutes.
  4. Meanwhile, in medium bowl, mix eggs, sugar, flour and lemon juice until creamy.
  5. When ready, pour egg mixture over crust and bake for additional 25 minutes.
  6. Sprinkle with powdered sugar, if desired, when the bars are done. Cut into 20 bars.
