Sweet Potato Celery Soup

Sweet Potato Celery Soup

Serves 2

Ingredients

2 Tbsp. butter
2 pounds celery, cut into 1 inch pieces, leaves discarded
1 large Vidalia onion, finely chopped
1 large sweet potato, peeled and cut in 1/2 inch cubes
1/4 tsp. sea salt
1/4 tsp. pepper
6 cups vegetable broth
3 Tbsp. freshly squeezed orange juice

Directions

1. Heat butter in a large pot over medium heat.   Add celery, Vidalia onion, sweet potato, sea salt and pepper; cook for 15 minutes or until vegetables are soft.

2. Add vegetable broth; cook for 20 minutes. Transfer mixture to a blender or food processor; pulse until smooth.

3. Return mixture to the pot; add orange juice. Mix well to combine.

4. Serve warm.
