Sweet Potato Toast with Avocado

This recipe combines two trending healthy foodie favorites, sweet potato and avocado, to make one amazing, crowd-pleasing breakfast. You’ll love the wholesome simplicity of using sliced sweet potato as an alternative to bread.

Serves 2

Ingredients

1 sweet potato
1 avocado, mashed or sliced
1 Tbsp. Nutiva Coconut Oil with Butter Flavor
1 tsp. lemon juice
½ tsp. Redmond Garlic Salt
Dash of Redmond Real Salt
Dash of turmeric
Dash of paprika
Dash of black pepper

 Directions

  1. Slice the sweet potato lengthwise into 1/4-inch thick slices, so it resembles a piece of bread.
  2. Put the slices in a toaster and toast. You may need to toast it twice.
  3. Spread buttery coconut oil on each slice and let melt.
  4. Top toast with avocado and remaining ingredients.
