Toasted Coconut and Apple Quinoa

There’s something comforting about spooning into a warming bowl of oatmeal first thing in the morning. But sometimes you just can’t stomach those lumpy oats and need a change of pace. Enter the slightly sweet, protein-packed red quinoa! The superfood is cooked with apple and tossed with honey and coconut chips for a delicious, satisfying breakfast that tastes more like a dessert (hint: apple pie!).

Toasted Coconut and Apple Quinoa

Serves 4

Ingredients

1 cup red quinoa, rinsed
2 cups water
2 medium apples, peeled, cored and chopped
Pinch pink salt
1 Tbsp. raw honey
2 Tbsp. (per bowl) toasted coconut chips

Directions

  1. In a medium pot, combined rinsed quinoa and 2 cups of water. Add chopped apple and pink salt, and bring to a boil. Reduce heat to simmer and cook covered for about 15 minutes.
  2. Remove from heat and drizzle with honey.
  3. Serve warm or cold, topped with coconut chips.
