This isn’t your grandma’s banana bread recipe. Loaded with crushed pineapple, it has a tropical-inspired upgrade that takes you on a taste-cation to the islands with every bite. Enjoy it as a wholesome breakfast or mid-day snack by toasting a slice and loading it up with your favorite toppings, such as chia seeds, sliced fruit, nut butter, hemp seeds, agave syrup or even more pineapple!

Tropical Pineapple-Banana Bread

Ingredients

Instructions

  1. Preheat oven to 350 degrees Grease loaf pan.
  2. In large bowl, mix together butter and sugars until creamy. One at a time, slowly mix in egg replacers. Stir in bananas and crushed pineapple.
  3. In separate mixing bowl, sift together flour, baking soda and salt.
  4. Slowly combine dry and wet ingredients until fully incorporated. Stir in vanilla until just combined.
  5. Pour batter into prepared loaf pan. Bake 45-50 minutes, or until golden brown. Let cool completely before slicing.
  6. Toast and serve with your choice of toppings.
