Turkey-Free Holiday Loaf
Serves 6
Ingredients
1 can low-sodium beans, rinsed and drained
2 cloves garlic, diced
½ cup green onions, chopped
2 Tbsp. parsley, chopped
1 Tbsp. cilantro, chopped
Juice of ½ lemon or 2 Tbsp. lemon juice
Juice of ½ lime or 1 Tbsp. lime juice
¼ cup unsweetened gluten-free baking mix
½ tsp. cumin
1- ½ Tbsp. extra-virgin olive oil
1 Tbsp. apple cider vinegar
Freshly ground black pepper, to taste
Cayenne pepper, to taste
Directions
1. Preheat oven to 350 degrees F.
2. Combine all ingredients in a high speed blender and blend well.
3. Spoon mixture into lightly oiled loaf pan or mini-loaf pans.
4. Bake for 20 to 25 minutes or until a toothpick inserted into center comes out clean.
