When you think of winter comfort foods, kale might not immediately come to mind. But it certainly does the trick in this warm and hearty soup, when it’s joined with savory turkey sausage, flavorful tomatoes and belly-satisfying lentils (seriously, it’s hard not to love lentils). So next time the weather outside is frightful, you can stay inside and stay nourished — at least until the soup runs out!
Turkey Sausage, Lentil and Kale Soup
Ingredients
- 1 lb. turkey sausage
- 1 cup brown lentils dry (rinsed)
- 1 can red kidney beans drained, rinsed
- 32 oz. reduced sodium chicken broth
- 1 cup water
- 1 can fire roasted diced tomatoes undrained
- 7 cups baby kale
- Parmesan or Feta cheese for topping
Instructions

In a large pot over medium heat, cook sliced turkey sausage heat until no longer pink throughout.

Add in lentils, red kidney beans, broth, and water; bring to a boil and lower heat to a simmer.

Keep covered for approximately 30 minutes or until lentils are tender.

Add tomatoes and stir, then add kale and stir until softened.

Optional: sprinkle Parmesan or feta cheese just before serving.
