Valentine’s Day Sugar Cookies with Chocolate Frosting
Ingredients
1 scoop Quest Vanilla Milkshake Protein Powder
1/3 cup Swerve Granular Erythritol
1/3 cup Nutiva Coconut Flour
1 tsp. baking powder
1/8 tsp. cinnamon
1 jumbo egg
½ + ¼ cup So Delicious Cashew Milk, divided
¼ cup Sweet Spreads Vanilla Cupcake Coconutter, softened
2 oz. reduced fat Cream Cheese, softened
1/8 tsp. vanilla
¼ cup Lily’s Dark Chocolate Chips
Directions
- Preheat oven to 375 degrees F. Line a cookie sheet with a Silpat or parchment paper.
- In a large bowl, using ½ cup of cashew milk, combine all ingredients except for chocolate chips and sprinkles.
- Roll out dough to about ¼ – ½ inch thickness. Stamp out 10 cookies with a heart-shaped cookie cutter.
- Place cookies on prepared baking sheet and bake for 10 minutes.
- Meanwhile, heat chocolate chips and remaining cashew milk and stir together until smooth. Allow to slightly cool to thicken.
- Remove baked cookies from oven and frost with chocolate mixture. Top with sprinkles, if desired.
