Vanilla Almond Protein Fudge

Ingredients
1 scoop Quest Vanilla Milkshake Protein Powder
¼ cup Swerve Confectioner’s Style Erythritol
1 Tbsp. Nutiva Coconut Flour
1/8 tsp. cinnamon
½ cup Silk Cashew Milk
¼ cup Sweet Spreads White Chocolate Coconutter, melted
1/8 tsp. almond extract
1 Quest Vanilla Almond Crunch Protein Bar, diced into small pieces
1 Tbsp. Lily’s Dark Chocolate Chips
1 Tbsp. sliced almonds
Directions
- Line a loaf pan with wax paper.
- In a large mixing bowl, combine protein powder, erythritol, coconut flour and cinnamon. Set aside. In a medium bowl, combine cashew milk, coconutter and almond extract. Add to dry ingredients. Mix until well combined.
- Fold in protein bar pieces.
- Pour batter into prepared pan and top with chocolate chips and sliced almond. Gently press chocolate and almonds into the batter.
- Place pan in freezer to set.
- Before serving, slice fudge into six equal loaves and cut each into 4 blocks, giving you 24 fudge squares.
