Vanilla Almond Protein Fudge

Ingredients

1 scoop Quest Vanilla Milkshake Protein Powder
¼ cup Swerve Confectioner’s Style Erythritol
1 Tbsp. Nutiva Coconut Flour
1/8 tsp. cinnamon
½ cup Silk Cashew Milk
¼ cup Sweet Spreads White Chocolate Coconutter, melted
1/8 tsp. almond extract
1 Quest Vanilla Almond Crunch Protein Bar, diced into small pieces
1 Tbsp. Lily’s Dark Chocolate Chips
1 Tbsp. sliced almonds

Directions

  1. Line a loaf pan with wax paper.
  2. In a large mixing bowl, combine protein powder, erythritol, coconut flour and cinnamon. Set aside. In a medium bowl, combine cashew milk, coconutter and almond extract. Add to dry ingredients. Mix until well combined.
  3. Fold in protein bar pieces.
  4. Pour batter into prepared pan and top with chocolate chips and sliced almond. Gently press chocolate and almonds into the batter.
  5. Place pan in freezer to set.
  6. Before serving, slice fudge into six equal loaves and cut each into 4 blocks, giving you 24 fudge squares.
