There’s something about fresh-baked cookies that brings back wonderful childhood memories of baking with Mom. If only they weren’t so full of calories and that dreaded processed sugar! The difference with the sweet treats is they showcase rich, vanilla flavor and replace the refined white stuff with nutrient-packed coconut sugar. But just like the cookies you made many moons ago, you can’t forget the sprinkles!

Vanilla-Almond Protein Cookies with Sprinkles

Ingredients

1/4 cup melted coconut oil
1/3 cup coconut sugar
1/2 tsp. baking powder
1 tsp. almond flavoring
1 cup almond flour
2 Tbsp.. almond milk
2 scoops vanilla protein powder

Directions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine all wet ingredients.
  3. In a separate bowl, combine all dry ingredients.
  4. Add dry ingredients to wet and stir until thoroughly mixed.
  5. Roll the batter into small balls, and then roll each ball into a bowl of sprinkles.
  6. Place the cookies onto a baking sheet.
  7. Bake for about 15 minutes.
  8. The cookies will be very soft. Allow to set for a few minutes and enjoy!
