Vegan Stuffed Mushrooms

If you like mushrooms, it’s hard not to love them stuffed. These bite-sized, decadent treats are made with gluten-free crackers and dairy-free cheese, leaving no one at your dinner table longing. Think you can stop at just one? With such wholesome, nutritious ingredients, you don’t have to!

Vegan Stuffed Mushrooms

Makes 28

Gluten free, dairy free, soy free and vegan

Prep time: 20 minutes
Cook time: 25 minutes

Ingredients

½ cup gluten-free crackers
¼ cup dairy-free Parmesan cheese
2 oz. dairy-free cheese shreds
2 garlic cloves, peeled and minced
¼ cup chopped fresh parsley
¼ tsp. salt
¼ tsp. pepper
2 tbsp. olive oil
28 large white button mushrooms, stemmed

Directions

1. Preheat oven to 400 degrees F.    Prepare a large baking dish with nonstick baking spray.

2. In a large bowl, combine crackers, cheeses, garlic, parsley, salt, pepper and olive oil; mix well.

3. Stuff filling into mushroom cavities; arrange on baking sheet.

4. Bake until the mushrooms are tender, approximately 25 minutes.

5.  Serve warm.
