Vegan French Toast Casserole

The easiest way to make French toast? Bake up a bunch in a pan! It’s the perfect solution whether you’re serving Sunday brunch for a few close friends or preparing breakfast for the week ahead. Plus, this recipe makes easy even easier. There’s no need to soak each slice individually. You’ll simply pour a vegan and superfood-enhanced mixture over gluten-free bread, bake and voila! You’ve got yourself a quick, delicious morning meal that you can share or keep all to yourself.

Vegan French Toast Casserole

Serves 4

Ingredients

5 slices of gluten-free sourdough bread, cubed
1 cup water
2 Tbsp. hemp seeds
1 Tbsp. chia seeds
6 Medjool dates, soaked in water (to soften) and pitted
Pinch of cinnamon
Pinch of pink salt
¼ cup coconut flakes, medium shredded

Directions

  1. Preheat oven to 375 degrees F. Grease a 8×8-inch baking pan with coconut oil.
  2. In a blender, blend water, hemp, chia, dates, cinnamon and salt.
  3. Place bread cubes in pan and pour liquid mixture over top, coating all pieces. Sprinkle with shredded coconut.
  4. Bake for 20-25 minutes or until top starts to brown.
  5. Serve warm, with fruit and a glass of your favorite nut milk.
