Plus, this recipe makes easy even easier. There’s no need to soak each slice individually. You’ll simply pour a vegan and superfood-enhanced mixture over gluten-free bread, bake and voila! You’ve got yourself a quick, delicious morning meal that you can share or keep all to yourself.
Vegan French Toast Casserole
Serves 4
Ingredients
5 slices of gluten-free sourdough bread, cubed
1 cup water
2 Tbsp. hemp seeds
1 Tbsp. chia seeds
6 Medjool dates, soaked in water (to soften) and pitted
Pinch of cinnamon
Pinch of pink salt
¼ cup coconut flakes, medium shredded
Directions
- Preheat oven to 375 degrees F. Grease a 8×8-inch baking pan with coconut oil.
- In a blender, blend water, hemp, chia, dates, cinnamon and salt.
- Place bread cubes in pan and pour liquid mixture over top, coating all pieces. Sprinkle with shredded coconut.
- Bake for 20-25 minutes or until top starts to brown.
- Serve warm, with fruit and a glass of your favorite nut milk.
