Saying no to cheese is a choice for many; but, for others, it’s a health (ahem, digestive) must. Whether you’re vegan, lactose intolerant or simply looking for lighter, healthier meal recipes, this dairy-free dish should be what’s for dinner! Replacing that classic bright-orange powder is a mixture of nutritional yeast and coconut oil. The creaminess comes from something you might not expect—the way the gluten-free pasta is cooked.
Vegan & Gluten-Free Mac and “Cheese”
Serves 3-4
Ingredients
2 cups (uncooked) brown rice pasta
3-1/4 cups water
3 Tbsp. nutritional yeast
½ Tbsp. coconut oil
1 tsp. sea salt
Directions
- In large pot, bring water to a boil; reduce heat to medium low, and stir pasta continually for 10-20 minutes until soft. (Note: Pasta will absorb water and begin to take on a “creamy” appearance. Unlike cooking pasta the traditional way—draining before serving—this method involves allowing the pasta to soak up the liquid. Do not drain cooking water.)
- When pasta is soft, add nutritional yeast, coconut oil and salt; stir until well combined.
