Vegan & Gluten-Free Mac and “Cheese”

Saying no to cheese is a choice for many; but, for others, it’s a health (ahem, digestive) must. Whether you’re vegan, lactose intolerant or simply looking for lighter, healthier meal recipes, this dairy-free dish should be what’s for dinner! Replacing that classic bright-orange powder is a mixture of nutritional yeast and coconut oil. The creaminess comes from something you might not expect—the way the gluten-free pasta is cooked.

Vegan & Gluten-Free Mac and “Cheese”

Serves 3-4

Ingredients

2 cups (uncooked) brown rice pasta
3-1/4 cups water
3 Tbsp. nutritional yeast
½ Tbsp. coconut oil
1 tsp. sea salt

Directions

  1. In large pot, bring water to a boil; reduce heat to medium low, and stir pasta continually for 10-20 minutes until soft. (Note: Pasta will absorb water and begin to take on a “creamy” appearance. Unlike cooking pasta the traditional way—draining before serving—this method involves allowing the pasta to soak up the liquid. Do not drain cooking water.)
  2. When pasta is soft, add nutritional yeast, coconut oil and salt; stir until well combined.
