Pomegranate-Vanilla Ice Cream
Ingredients
Ice Cream
3 frozen bananas, cut into 1 inch pieces (freeze 6-8 hours)
1/3 cup pomegranate juice
1 T. white chia seeds
Chocolate Syrup
1 T. vanilla infused olive oil
1 T. cacao powder
1 tsp. maple syrup (vegan version) or raw honey
Directions
- Peel bananas and cut into 1 inch pieces (for easier blending later). Place in freezer bag, freeze overnight or 6-8 hours.
- Combine pomegranate juice with white chia seeds to allow chia seeds to expand.
- Remove bananas from freezer, unwrap and toss into food processor. Pulse 1 minute then add pomegranate juice and chia seeds. Blend until smooth.
- Meanwhile, make chocolate syrup by whisking together vanilla infused olive oil, cacao powder, and honey or maple syrup. Adjust sweetness to your taste.
- Scoop out pomegranate banana ice cream into 2 serving dishes, drizzle with chocolate syrup. Enjoy with your sweetheart!
