Vegetarian Jambalaya Burritos

Looking for a new way to jazz up a burrito? Switch the seasoning from traditional Mexican to Louisiana flair with jamabalya-style filling and flavoring made easy, thanks to an already blended mix of cajun spices. Like the classic New Orleans dish, this hand-held spin offers plenty of kick. But you won’t find yourself weighed down by that traditional mix of meat. This version is music to everyone’s ears with vegetarian red beans and rice making up the main part of the meal.

Jambalaya Bean Burrito Recipe

Vegetarian Jambalaya Burritos

Ingredients

1 15-oz. can red beans
1 pkg. Simply Organic® Jambalaya Seasoning Mix
1 cup cooked rice
6 tortillas (7 to 8 inches each)
1/2 cup shredded Cheddar Jack cheese

Directions

1. In small saucepan over medium heat, combine beans and seasoning mix. Stir occasionally until beans are thoroughly warmed.
2. Stir in rice. Continue to cook over medium heat until entire mixture is heated.
3. Divide mixture evenly among tortillas. Top with cheese. Roll into burritos.
