Walnut & Cannellini Bean Pate

Traditional pate is made from meat, but this vegan version combines rich walnuts and hearty white beans for a similar texture and unique flavor! Serve chilled as an appetizer with fresh-cut veggies or gluten free crackers, or keep some in your refrigerator for a quick and tasty sandwich spread.

Walnut & Cannellini Bean Pate

Ingredients

1/3 cup walnuts
1/3 cup cooked cannellini beans (or beans of choice)
2 flax “eggs”*
1 clove garlic, diced
Black pepper to taste
Juice from half of a lemon
Flaxseed meal

*To make a flax “egg,”  combine ¼ cup + 2 Tbsp. flaxseed meal with 1 cup + 2 Tbsp. water; let sit for three minutes.

Directions

  1. Combine all ingredients in a food processor or high-speed blender. Blend until smooth.
  2. Serve chilled.
