Rice Cake Pizza with Walnut Meat

Ingredients
Crust
13 brown rice cakes
¾ cup fresh basil, for layering
Sauce
2 medium tomatoes
1 cup sundried tomatoes
1 garlic clove
¼ red or yellow onion
1Tbsp. extra virgin olive oil
¼ tsp. black pepper
¼ tsp. chili flakes or cayenne pepper
½ Tbsp. dried basil
½ tsp. dried thyme
½ tsp. dried parsley
½ tsp. dried oregano
Cashew Cheese
2 cups cashews
2 Tbsp. nutritional yeast
Juice of 1 small lemon (no more than ¼ cup)
½ tsp. salt
½ cup water
Walnut Meat
1-½ cup walnuts
1 cup sundried tomatoes
2 Tbsp. olive oil
1 tsp. dried sage
1 tsp. fennel seeds
1 tsp. thyme
1 tsp. rosemary
1 tsp. oregano
1 pinch black pepper
1 pinch cayenne pepper
1 pinch salt
Directions
- Prepare the sauce. In a blender, add all ingredients and mix until well combined.
- Prepare the cashew cheese. In a blender, combine all ingredients until smooth.
- Prepare the walnut meat. In a blender, combine all ingredients for about 5 minutes or until smooth.
- To assemble the pizza, first place raw pizza sauce on each rice cake. Follow with cashew cheese, fresh basil and, finally, walnut meat.
