Warming Turmeric-Ginger Rice

With its bright yellow color and exotic, warming flavor, turmeric is a spice that adds excitement — not to mention healthy benefits — to any dish. Curries probably come to mind, but don’t think your cooking has to get complicated to showcase the taste of turmeric. This seasoned side dish is made simply, stir fry style, with just a handful of veggies and boiled brown rice. Serve it on the side or add a scoop to a large lettuce leaf for an easy vegan wrap.

Warming Turmeric-Ginger Rice

Ingredients

2 cups brown rice (uncooked)
2 Tbsp. extra virgin olive oil
2 Tbsp. turmeric powder
2 Tbsp. chopped garlic
1 Tbsp. chopped ginger
1 carrot, sliced into rounds
1 yellow onion, chopped

Directions

  1. In large pot, boil rice in four cups of water for about 30 minutes, until slightly tender but not entirely cooked.
  2. In large skillet or frying pan, heat olive oil over medium heat. Add turmeric, garlic, ginger, carrots and onion and cook until golden brown.
  3. Add semi-cooked rice to skillet and stir-fry with vegetables for about 2 minutes until rice is yellow, coated with turmeric, and fully cooked.
  4. Serve as a side dish or add a scoop of rice mixture to a lettuce leaf to make a wrap.
