Summer Appetizer: Watermelon Mint Avocado Salsa

This summery snack is one of the easiest recipes you’ll make all season! Take everyone’s favorite seasonal fruit, watermelon, and combine it with finely diced cubes of creamy avocado, feta cheese and cool mint. Scoop with pita chips or restaurant-style tortilla ships for a refreshing appetizer or side dish.

But what’s really great is that this salsa doubles as a salad by tossing in a small handful of your favorite nuts or seeds such as walnuts, pine nuts or hempseeds. You can also add in some high-fiber bulgur and Kalamata olives for a heartier salad.

Ingredients

8-oz. block feta cheese
8 oz. watermelon
2 ripe avocados
1 Tbsp. Vitacost Organic Extra Virgin Olive Oil
Fresh mint leaves, finely chopped, or dried mint for garnish
Pita or restaurant-style tortilla chips for scooping

Directions

  1. Chop watermelon, feta cheese and avocado. Transfer to bowl.
  2. Add olive oil and sprinkle with 1 Tbsp. dried or fresh mint leaves. Serve with chips.

Additional tips:

  • To serve as a salad, slice watermelon and feta cheese into about 1/4-inch-thick cubes. Pit and slice avocados and top with preferred nuts or seeds.
  • You can also stack the ingredients onto toothpicks, adding grapes or Kalamata olives, and serve as mini skewers.
