White Chocolate Blondies

You know when you really need something sweet? You don’t just crave it or kind of want it because you passed by a donut shop this morning. No, you need that powerful, intoxicating taste-bud takeover. Essentially, you need these white chocolate blondies. Made from rich cocoa butter, sugar and vanilla, white chocolate offers a more sensory experience than the dark stuff. It’s this especially hypersensitive sweetness that will instantly put a smile on your face.

White Chocolate Chip Blondies

Ingredients

1 ½ cup almond flour
¼ cup coconut flour
½ cup coconut sugar
½ cup white chocolate chips
1 tsp. baking powder
¼ cup plain Greek yogurt
¼ cup almond milk
1 whole egg
1 egg white
Pinch of salt

Directions

  1. Preheat oven to 350 degrees F and coat an 8” x 8” baking dish with non-stick cooking spray.
  2. In a large bowl, combine all ingredients (except chocolate chips) and stir well. Batter will be thick.
  3. Add chocolate chips, reserving a few for topping.
  4. Spoon batter into prepared baking dish, top with extra chocolate chips and bake for 20 minutes, or until a toothpick comes out clean.
  5. Slice into 9 even squares and eat up!
