Interior decorators say that pumpkin orange has a warm, soothing effect on a room. Logically, pumpkin cookies would do the same. Not only will their rich color woo you, but the deep deliciousness that wafts through the air is a lovely invitation to dig right in. For extra-impact, you’ll speckle the cookie batter with sweet white chocolate chips. Make these warm welcome-home treats for birthdays, Halloween and especially the holidays.
Ingredients
1 ½ cup oat flour
2 scoops vanilla or cinnamon protein powder
½ cup white chocolate chips (more or less)
2/3 cup pumpkin puree
1/3 cup honey
1 egg white
1 tsp. baking powder
Directions
- In a large bowl, combine all ingredients except white chocolate chips.
- Stir in white chocolate chips, and dollop scoops of cookie batter on a greased baking sheet – keeping about an inch or two apart.
- Bake at 350°F for about 10-12 minutes, or until slightly crispy.
