Instructions
  1. Preheat oven to 300 degrees F. Line sheet pan with parchment paper.
  2. In bowl, mix together oatmeal cookie crumble wet ingredients maple syrup and oil. Add dry ingredients and stir until fully incorporated.
  3. Spread mixture onto prepared pan and flatten with spatula. Bake 40 minutes or until lightly browned. Let cool completely.
  4. For nectarines, preheat oven to 400 degrees F.
  5. Cut nectarines in half vertically and remove pits. On baking dish, place nectarine halves cut side up.
  6. In small bowl, mix together all remaining nectarine ingredients. Pour mixture over nectarines and bake about 30 minutes, or until very soft. (Note: The length of time will depend on the nectarines ripeness.)
  7. To serve, spoon cookie crumble onto plate, top with nectarines, vanilla ice cream and then more crumble on top. Serve warm or cold.
