Gluten-Free Strawberry, Rhubarb & Apple Crumble

Ingredients
Crust
Filling
  • 2 cups chopped strawberries
  • 1 cup chopped apple
  • 1 cup rhubarb
  • ½ medium lemon juiced and zested
  • 1 Tbsp. maple syrup
Instructions
  1. Preheat oven to 425 degrees F.
  2. In large bowl, combine all crust ingredients. In bottom of 5”x7” baking dish, press crust until even, reserving some crumble for later. Bake 10 minutes.
  3. In medium pan over low-medium heat, combine strawberries, apples, rhubarb, lemon juice, lemon zest and maple syrup. Simmer until ingredients are softened but not browned.
  4. Over baked crust, pour filling. Sprinkle on reserved crumble. Bake 15 minutes, until browned.
