Directions
In a medium saucepan, bring 2 cups water to a boil. Add 1 cup oats, reduce heat to a simmer and cook for 3-6 minutes, depending on desired consistency, stirring occasionally. Serves 2.

The topping is a perfect mix of tender oats, light brown sugar and a pinch of salt, creating that dreamy contrast of crisp and soft in every bite. It’s comfort food made wholesome — and trust us, it needs a big scoop of vanilla ice (or “nice”) cream on top. Whether you're serving a crowd or sneaking an extra spoonful straight from the pan, this cherry crisp is pure fruity joy.
Gluten Free Cherry Crisp
Topping
- 1 cup gluten-free all-purpose flour
- 1/2 cup packed light brown sugar
- 2/3 cup gluten-free old-fashioned oats
- 1/4 tsp. kosher salt
- 6 Tbsp. vegan butter (melted)
Filling
- 2 lbs. frozen dark sweet cherries
- 1/4 cup coconut sugar
- 1 Tbsp. cornstarch
- 1 tsp. almond extract
- Preheat oven to 350 degrees F.
- In large bowl, combine flour, brown sugar, oats and salt. Add melted butter and mix gently until it forms a clumpy texture.
- In separate large bowl, toss together cherries, sugar, cornstarch and almond extract. Transfer cherry mixture to 9- or 10-inch pie plate or 9x9-inch baking dish. Top with flour mixture, leaving some smaller and larger clumps.
- Bake 45 to 50 minutes, until topping is golden and crisp and filling is bubbling. Cool for at least 10 minutes before serving.
