Instructions
  1. Preheat oven to 400 degrees F. Bake sweet potato for 30 minutes. Allow to cool; peel and cube.
  2. To large skillet, add broth and lentils and bring to boil. Reduce heat, cover and simmer 15 minutes.
  3. To skillet, add sweet potatoes, sun-dried tomatoes, garlic, salt and pepper. Stir together and simmer 10-15 minutes until sweet potatoes are soft.
  4. Stir in basil before serving.
