Instructions
  1. In large mixing bowl, combine dry ingredients.
  2. In small mixing bowl, whisk wet ingredients. Transfer wet ingredients to dry mixture and mix until fully incorporated.
  3. Fold shredded carrots and raisins into dough. Preheat oven 350 degrees F.
  4. Cover bowl and chill in refrigerator for 30 minutes.
  5. Once chilled, use cookie scoop or use hands to make 14 evenly sized dough balls.
  6. Evenly space dough balls onto parchment-lined baking sheet. Bake 12-14 minutes.
  7. Cool on baking sheet for a few minutes. Then, transfer cookies to wire rack to cool completely before serving.
