  1. Preheat oven to 425 degrees F. Line two baking sheets with parchment paper.
  2. Create assembly line with two bowls; one with whisked eggs, another with bread crumbs, yeast and seasonings. Dip zucchini into egg and let excess drip off; dip into dry mix to coat all sides. Arrange on baking sheet.
  3. Repeat until all sticks have been coated, leaving space to maximize crispiness.
  4. Bake 15-18 minutes, or until golden-brown and tender.
