  1. In small bowl, whisk together olive oil, lemon juice, cumin, salt and pepper. Taste and adjust as desired.
  2. In large mixing bowl, combine cooked quinoa, chickpeas, roasted red peppers, red onion, parsley and mint.
  3. Pour dressing over salad and toss gently until everything is well coated.
  4. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
