Ingredients
Instructions
  1. Preheat oven or air fryer to 380 degrees F.
  2. Peel sweet potatoes and cut them into 1/2-inch rounds
  3. Brush pieces on all surfaces with coconut oil.
  4. Season with lemon/pepper and pickling spice.
  5. Cook in air fryer or oven 15-20 minutes. (Note: Pierce with fork to make sure they are soft inside and toasted outside.)
  6. Arrange on serving plate. Sprinkle drops of lemon juice over each piece, and a bit of salt. Add cheese crumbles, cranberries, nuts and a few rosemary leaves. Drizzle with balsamic glaze.
  7. Serve warm.
