Ingredients
- 2 large sweet potatoes or 4 medium/small
- Organic coconut oil
- 2 tsp. pickling spice
- Sprinkle Lemon pepper
- Sprinkle Salt
- Juice of 1 lemon
- 1 cup goat cheese or feta
- 1 cup Pecans or walnuts
- 1/2 cup Dried cranberries or sweet tart cherries
- Fresh rosemary
- Balsamic vinegar glaze
Instructions

Preheat oven or air fryer to 380 degrees F.

Peel sweet potatoes and cut them into 1/2-inch rounds

Brush pieces on all surfaces with coconut oil.

Season with lemon/pepper and pickling spice.

Cook in air fryer or oven 15-20 minutes. (Note: Pierce with fork to make sure they are soft inside and toasted outside.)

Arrange on serving plate. Sprinkle drops of lemon juice over each piece, and a bit of salt. Add cheese crumbles, cranberries, nuts and a few rosemary leaves. Drizzle with balsamic glaze.
