3 Kid-Friendly Strawberry Recipes for Summer

Sweet strawberries are one of my favorite parts of the hot summer months. From crisp salads to delightful desserts, strawberries are a wonderful addition to many classic dishes. But if you need to whip something up in a hurry, here are three strawberry snack recipes that are big crowd pleasers in my house — for kids and adults alike.

3 Kid-Friendly Strawberry Recipes for Summer

Organic Strawberry Cheesecake Bites

Ingredients

1 lb. organic strawberries
6 organic graham crackers
4 Tbsp. organic cream cheese

Directions

  1. Rinse strawberries with veggie wash to remove any residue, remove tops then slice in half.
  2. Break each cracker in half. Spread a small amount of cream cheese on each cracker.
  3. Top each cracker with a sliced strawberry.

Dairy-Free Chocolate Covered Strawberries

1 lbs. organic strawberries
1/4 cup dairy-free chocolate chips
1 tsp. organic coconut oil

Directions

  1. Rinse strawberries with veggie wash. Let dry on a tea towel while making chocolate dip.
  2. Using a double boiler (or the microwave in 30 second increments) slowly melt chocolate chips and coconut oil until smooth.
  3. Dip each strawberry and set on a sheet of waxed paper. Chill until ready to eat.

Strawberry Cooler

Ingredients

1/2 cup organic strawberries
1 liter coconut water
Fresh mint
Ice

Directions

  1. In  food processor or high speed blender, puree strawberries.
  2. Mince one leaf of mint and keep the remaining leaves for garnish.
  3. In the bottom of a tall glass tumbler, place two tablespoons of strawberry puree and a pinch of mint.
  4. Fill the rest of the class with coconut water and top with whole mint leaves.
