3-Step Chocolate-Peppermint Protein Bread

Popped a peppermint lately? Whether you were chewing on arctic-blast gum or slowly dissolving a hard, candy mint, you know how soothing and refreshing peppermint can be. Though a far cry from comfort food, it actually has a way of making you feel warm and fuzzy all over – especially when you pair it with chocolate. Oh, and bread. This simple, three-step bread recipe is the compilation of all things cozy and completely satisfying. After-dinner mints will have some heavy competition with this light-and-fluffy loaf.

Ingredients

4 scoops (about 100 g) chocolate protein powder
1/2 cup almond flour
1/4 cup oat flour
1/2 cup cocoa powder
1/4 cup coconut sugar
1/4 cup unsweetened applesauce
1/3 cup unsweetened almond milk
2 eggs
Peppermint extract
to taste

Toppings (optional)

Protein glaze
Candy canes or peppermint candies, crushed

Directions

  1. Preheat oven to 350 degrees F and coat a small loaf pan with coconut oil or non-stick cooking spray.
  2. In a large bowl, mix together all ingredients until well combined.
  3. Pour batter into prepared loaf pan and bake about 35 minutes, or until a toothpick comes out clean.
  4. In a small bowl, additional protein powder and almond milk to create a protein glaze. Start with 1 scoop protein powder and 2 tablespoons almond milk, adjusting to desired consistency.
  5. If using, drizzle protein glaze over baked loaf and top with crushed peppermint candy.
