Just because you aren’t adding red meat to this mildly spicy pot of chili doesn’t mean you aren’t adding flavor, nutrients and a whole lotta yumminess!
Vegetarian Chili
Ingredients
3 cans diced tomatoes
1 can black beans
1 can refried black beans
1 can kidney beans
1 can pinto beans
1 can corn
1 lb. soy crumbles
1 yellow onion, diced
¼ cup extra-virgin olive oil
3 Tbsp. chili powder
1 Tbsp. chopped garlic
Dash of cayenne
Directions
- In a large pot over medium heat, cook oil, onion, garlic and cayenne until onion becomes slightly golden.
- Add remaining ingredients and stir well.
- Simmer for 15 minutes, or until flavors are blended and fragrant.
- Serve with your favorite chili toppings and enjoy!
