30-Minute Vegetarian Chili

Cutting back, trimming the fat, lightening up. Call it what you will, but eating at least one vegetarian-approved meal each week can really make a difference in your overall health and well-being. Just because you aren’t adding red meat to this mildly spicy pot of chili doesn’t mean you aren’t adding flavor, nutrients and a whole lotta yumminess!

Vegetarian Meatless Chili Recipe

Vegetarian Chili

Ingredients

3 cans diced tomatoes
1 can black beans
1 can refried black beans
1 can kidney beans
1 can pinto beans
1 can corn
1 lb. soy crumbles
1 yellow onion, diced
¼ cup extra-virgin olive oil
3 Tbsp. chili powder
1 Tbsp. chopped garlic
Dash of cayenne

Directions

  1. In a large pot over medium heat, cook oil, onion, garlic and cayenne until onion becomes slightly golden.
  2. Add remaining ingredients and stir well.
  3. Simmer for 15 minutes, or until flavors are blended and fragrant.
  4. Serve with your favorite chili toppings and enjoy!
